Every drop is distilled here in Tarbert in our small copper gin still, known affectionately as 'The Dottach' after a similarly fiery and feisty local woman. The Dottach imbues our spirit with the complex delights of nine carefully chosen botanicals as we seek to capture the elemental nature of our island, particularly the maritime influences of the seas which surround us. TASTING NOTES On The Nose First comes the well-defined aroma of plump Macedonian juniper berries, before a fresh breeze of pine needles arrives, like an Autumn walk in Aline forest. Then there is a bright citrus, weaving together with a complex air of summer machair flowers and crushed croft herbs, all underpinned by a pleasant pepperiness. The Sugar Kelp speaks softly, adding to the complexity with a dry, maritime scent. - On The Palate Initially, there is an unmistakably luxurious mouthfeel and a weighty softness to the spirit. This is a gentle but refreshing gin, displaying effortless balance. We find a delicious sweetness working in harmony with sharper citrus and the green, herbal character which soon develops. A warm, peat-fire spice glows throughout. The Sugar kelp remains complex and elusive, emerging in quiet but distinctive waves. - On The Finish Finally, a long, clean finish as the juniper and citrus fade away to leave a sense of sweet candy and vanilla, with memories of black pepper. There is just a gentle reminder of the sea, like water sun-drying on coastal rocks.
