GEOFFREY'S

As a base for our Geoffrey's, we recycle the pome fruit spirit left over from the de-alcoholization of the juice from the barrel. Overnight we macerate in it twelve "botanicals", such as dried juniper berries and fresh lemon zest, and distill the whole carefully the following morning. Geoffrey's Gin surprises with its tart, strong taste and its fresh citrus and apple notes.

Our gin can be enjoyed neat, but also invites mixing. We recommend a mild tonic that does not appear too dominant.
